If you’re looking for a midweek meal, try these super easy quesadillas!
Method:
- Place one of the flour tortillas onto a chopping board or plate.
- Mix together the cheese and vegetable ingredients in a large bowl. Spread ¼ of the mixture over the tortilla and top with another wrap. Repeat 3 times using the remaining ingredients.
- Heat a large non-stick frying pan and carefully place the filled tortilla into the pan. Cook on a medium heat for 3 – 4 minutes, until golden. Gently turn over the filled tortilla, and cook on the other side until golden and the cheese melted. Remove from the pan and keep warm.
- Repeat with the remaining quesadillas. Slice into wedges and serve.
