Seafood Paella

This tasty Seafood Paella is a great way to cook an impressive meal, the simple way.

 

Serves: 4

Preparation Time: 5 minutes

Cooking Time: 20 minutes

Method:

Heat the oil in a deep sided frying pan, wok or large shallow pan.

Add the onion and fry until soft, add the garlic and continue frying for one minute.

Add rice, fry for a minute until well coated with the oil and add paprika.

Stir in tomatoes and stock.

Bring to the boil, leave uncovered and simmer for 15 minutes or until the rice has absorbed all the liquid.

Stir in mackerel, mussels and frozen peas, gently heat through.

Serve immediately with wedges of lemon.

 

Hints and Tips

Try replacing the mackerel with canned salmon.
