Louisiana Style Loaded Air Fries By Theo Michaels

This is perfect comfort food; super crisp air fried canned potato wedges, a creamy cheesy sweetcorn sauce, hot jalapeños, crispy onions, Cajun spice and BBQ sauce. Take all these ingredients and then pop them back in air fryer for a second round to melt it altogether! You can freestyle this with whatever cheese you like or extra toppings.

Method:

  1. Heat air fryer to 205c
  2. Drain the potatoes, slice 1cm pieces and pat dry with a towel then place into a mixing bowl. Drizzle over half the olive oil, season with salt and pepper and two-thirds of the Cajun spice. Cook in the air fryer for 10 minutes – or until crispy.
  3. While the potatoes are cooking, fry the sliced onions on medium heat with a little olive oil for 6 minutes until soft and caramelised and put aside.
  4. In a saucepan, add the flour and butter and cook for a few minutes before removing from the heat and pour in the milk and whisk. Return to the heat and keep whisking until it thickens and bubbles. Pour in the drained sweetcorn from the can and add the grated cheese with plenty of seasoning and stir until the cheese has melted and remove from the pan.
  5. Once the potatoes are cooked, simply add them to an oven-proof dish, one that fits your air fryer.
  6. Lay the potatoes out, spoon over the sweetcorn cheese sauce, then top with fried onions, jalapeños, crumbled feta and a little pinch of Cajun spice, salt and pepper and if you want, return to the air fryer for a few minutes at 200c to melt.
  7. Garnish with crispy fried onions, sliced spring onions and a drizzle of BBQ sauce!
  NOTE: Equally, if you don’t have an oven proof dish to fit your air fryer you could pop the loaded fries into an oven to melt the cheesy topping.  In fact, this recipe can be baked in the oven in its entirety – just set temperature to 210 fan.
