Mini Ham and Mixed Vegetable Quiches

Why not try our festival favourite – mini ham and mixed vegetable quiches?

Method:

  1. Pre-heat oven to 180°C, gas mark 4.
  2. Unroll the sheets of pastry, cut into 12 x 9cm circles and use to line 2 x 12-hole muffin tins.
  3. In a large bowl beat together the eggs and milk. Cut the ham into small cubes and stir into the milk mixture, together with the drained vegetables and cheese.
  4. Divide the mixture between the pastry cases and bake for 20-25 minutes, until risen and golden. Leave to cool for a few minutes before removing from the tin.
 Cook’s tip: If you only have 1 x 12-hole muffin tin, complete recipe with 1 sheet of pastry and half the mixture first, then repeat.
